Need a crowd pleasing appetizer? How about some Spinach Artichoke Dip? Simple enough for a Super Bowl party but fancy enough for Christmas Eve (we munched on this as we were lounging around) – serve with a fresh baguette, pita chips or tortilla chips.
Ingredients:
- 8 oz. cream cheese (softened)
- 1/4 c. mayonnaise
- 1/2 c. grated Parmesan Romano cheese
- 1 tbsp. chopped garlic
- 1/4 tsp. salt
- 1/4 tsp. fresh pepper
- 1 can (14 oz.) artichoke hearts
- 1/2 c. frozen chopped spinach (thawed)
- 1/4 c. shredded mozzarella cheese
Directions:
- Preheat oven to 350 degrees
- Lightly grease a small oven-safe casserole dish
- In a medium bowl, mix together cream cheese, mayonnaise, Parmesan Romano cheese, garlic, salt and pepper
- Drain and chop artichoke hearts
- Gently stir spinach and artichokes into mixture
- Transfer to casserole dish and top with mozzarella cheese
- Bake for 25 minutes until bubbly, golden brown and delicious
- Try and wait a few minutes before diving in to reduce risk of molten Spinach Artichoke Dip mouth burns
